ANCIENT PASTRY SHOP “JOLE 1930”, HISTORIC COMPANY IN ITALY

The old Jole pastry shop, founded in 1930, is located in a historic building in the central square of Sassello, a charming village in the mountains of the Beigua Park, half an hour from the sea in the province of Savona. It was founded by Caterina Dabove and her husband Pietro Rossi. She had just closed the post office, changing horses for the stagecoaches, an ancient and fundamental service at the time, due to the advent of motorisation, and he, Pietro Rossi, founder of the first macaroons factory, wanted to expand the business and needed new space.

The old pastry shop licence was extended by investing in new equipment, renovating the laboratory and adding to the already famous production of “Sassellini” (soft-hearted chocolates), that of the traditional "amaretti di Sassello" (Sassello’s macaroons), thus dusting off the old recipes jealously kept in a drawer at home.

This is the story of the Antica Pasticceria Jole, recognised and entered in the register of historic companies in Italy.
